BECKLEY, WV (WOAY) – In 2023, the Beckley Council passed a food truck ordinance allowing mobile food vendors to get a permit to operate in certain parts of the city.
It worked for Marcos Raymundo, who started his Tacos de Marcos when COVID hit and business has been great since.
“I figured I would do my own then I started selling tacos on the street, in front of the house,” owner/vendor Raymundo said. “People like the food, and then they pushed me to do more. And then I end up getting this taco truck, I’ll be busy, people be calling me where I’m at. Like, sometimes I close for a couple of days; they would blow my phone up.”
The cook has found his calling, reflected in his food and all those repeat customers.
“A lot of Beckley people that loves the birria taco or steak taco; like the authentic street taco,” said Raymundo. “We put love to our food. All the seasoning it comes straight from Guatemala, so that’s what makes the difference.”
The cook’s personal favorite…
“Carne asada taco, of course,” he said. “I like it with some grilled onions, some jalapeno, hot sauce on it. And that’s my thing.”

“They should know when I’m coming back to Beckley and they should get to try like, the most authentic Mexican they can find in town,” said Raymundo.
The cook is also a partner in a Bluefield, Virginia restaurant and says hopefully in another year or two they can find some Beckley spot to open a second restaurant. Does that mean he’ll part ways with his food truck?
“I will still do this because this is like my baby,” Raymundo said. “Get to meet different people and get my name out there, make me happy when they tells me, like, they love the food and all that stuff. That just inspires me more and more.”
